Ginny Callan, formerly of New York City, discovered the joys of country living when she moved to Vermont in 1970 to attend college. After becoming a vegetarian, she and a friend launched a natural foods sandwich company called "Mother's Best" in 1976. The following year she opened the Horn of the Moon Cafe, which has become one of the region's most popular restaurants. Ginny occasionally teaches cooking classes along with running the cafe and being active in grass-roots politics.
